Pumpkin Fritters with Salmon








For the fritters:

  • Oil for frying
  • 140g pumpkin, grated
  • 4 tbsp plain flour
  • 1 tspn baking powder
  • 1 large egg
  • 2 tbsp milk
  • 1 spring onion, finely chopped
  • Small handful herbs (coriander, dill or parsley works well)
  • 1/2 red chilli, finely chopped
  • Zest of half lemon
  • 25g Parmesan cheese, grated
  • Salt and pepper to taste

For lemon sour cream:

  • 4 tbsp sour cream
  • Juice and zest of half a lemon juice
  • Salt and pepper to taste

For serving:


Pumpkin Fritters with Hot Smoked Salmon


  • Mix all of the fritter ingredients together, except the oil.

  • Add some oil to a frypan set over a medium heat, and fry until golden brown (about 2 minutes each side). Keep warm in a low (100°C) oven until serving.

  • For the lemon sour cream, mix all ingredients together.
  • To serve, place three warm fritters on a plate and top with lemon sour cream & flakes of hot smoked salmon.

This makes approximately 12 fritters.
