
Pumpkin Fritters with Salmon

Ingredients
For the fritters:
- Oil for frying
- 140g pumpkin, grated
- 4 tbsp plain flour
- 1 tspn baking powder
- 1 large egg
- 2 tbsp milk
- 1 spring onion, finely chopped
- Small handful herbs (coriander, dill or parsley works well)
- 1/2 red chilli, finely chopped
- Zest of half lemon
- 25g Parmesan cheese, grated
- Salt and pepper to taste
For lemon sour cream:
- 4 tbsp sour cream
- Juice and zest of half a lemon juice
- Salt and pepper to taste
For serving:
- One of our Hot Smoked Salmon
- Herb leaves, for garnish
Instructions

Mix all of the fritter ingredients together, except the oil.

Add some oil to a frypan set over a medium heat, and fry until golden brown (about 2 minutes each side). Keep warm in a low (100°C) oven until serving.
- For the lemon sour cream, mix all ingredients together.
- To serve, place three warm fritters on a plate and top with lemon sour cream & flakes of hot smoked salmon.
This makes approximately 12 fritters.
